Isolated in 1846 by Théodore Gobley from egg yolk, lecithins are now mainly produced from soy, sunflower, and canola oils.

Lecithins contain various phospholipids, particularly phosphatidylcholine.

These lipid compounds have a dual polarity that allows them to homogenize and stabilize emulsions.

These properties are especially valuable in the food industry, where their applications are numerous:

  • Adjusting the viscosity of cocoa paste
  • Improving the elasticity of bread dough
  • Adjusting the moisture of biscuits
